PORK CRACKLING GORDITAS

INGREDIENTS

  • 2 cups MASECA NIXTAMASA corn flour
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/4 cup oil
  • 1 cup pressed pork cracklings

INSTRUCTIONS

Prepare the masa mixing the MASECA NIXTAMASA corn flour, water and salt. When all ingredients have been incorporated and you have a uniform dough, make a small ball of dough and press in the center to add a tablespoon of pork cracklings. Close the dough covering the pork cracklings and press again to form the gordita into a 4” patty. Cook on both sides with little oil until golden brown. Serve with cilantro, onion, and salsa of your choice.

INGREDIENTS

  • 2 cups MASECA NIXTAMASA
  • 3⁄4 cups water
  • 1 teaspoon salt
  • 1 cup refried beans
  • 1 cup green salsa
  • 1 1/2 cup longaniza, crumbled and fried
  • 1⁄2 cup cheese, shredded

INSTRUCTIONS

Prepare the dough using MASECA NIXTAMASA corn flour and adding water and salt. With a small ball of dough, make small thick tortillas and cook on skillet. Immediately after cooking, press around the edges with your fingertips to form like a small plate. Spread beans and add salsa, longaniza, and cheese. Serve them warm. You can also top with pork cracklings, poblano chile strips or your favorite dish.

INGREDIENTS

  • 2 cups MASECA NIXTAMASA
  • 1/4  teaspoon salt
  • 1 1/4 cups water

INSTRUCTIONS

In a large bowl, mix MASECA NIXTAMASA corn flour, water, and salt until you form a smooth and soft dough. It should not stick to your hands.

Divide dough into 16 equal portions and shape into balls. Flatten each ball with a tortilla press, placing the dough between two sheets of plastic.

Heat griddle or skillet and place tortilla to cook for a minute on each side or until tortilla inflates.
